Ham, Bacon & Potato Soup

This is an excellent soup for those Canadian cold winter days. It's also a good soup if you happen to have a left over piece of ham. The bacon provides a lot of the background flavour.

We used yellow potatoes, because that is what we happened to have. The recipe would work just as well with russet or red potatoes. If you want to use white potatoes you may want to decrease the cooking time, to avoid having the potatoes turn into mush.

Salt is not included in the ingredient list because the ham and bacon generally provide enough salt for the soup. However, prior to adding the potatoes you should taste the soup and add salt if necessary.

You should be able to make the soup in less than 45 minutes.

  1. Place the butter and bacon in soup pot. Cook on medium heat until bacon renders its fat.
  2. Add the diced onion, carrot, celery, ham and garlic. Sweat the vegetables for 5 to 6 minutes.
  3. Add flour, continually mix for 3 minutes.
  4. Slowly add chicken stock while stirring. Add the water.
  5. Low simmer for 15 minutes. Check for salt.
  6. Rinse diced potatoes in cold water then add to pot. Bring the soup to a boil, reduce heat and simmer for 15 minutes.
  7. Taste and add salt if necessary. Add the black pepper and Italian seasoning.
  8. Slowly add the cream while stirring.
  9. Serve!
