Old-Fashioned Vegetable Soup

Makes 6 to 8 bowls of soup

Every now and then you come across a soup recipe that has exceptional body and flavour. This old-fashioned vegetable soup is an excellent choice for those cold, damp winter days.

Although this is the recipe we used for the first batch of the soup, it changes slightly each time it is made. If we have some left over that aren't listed in the ingredients they are likely to end up in the soup.

White beans such as Navy, Great Northern, Cannellini or even baby lima beans would probably make another excellent addition to the soup.

This soup recipe definitely allows you to be creative.

  1. In a large pot, sauté the pancetta, onions, shallot, leek and garlic in the olive oil and butter for 10 minutes.
  2. Stir in the celery, carrots, zucchini, potatoes, basil and parsley.
  3. Season with salt, pepper and Italian seasoning. Cook covered for about 10 to 15 minute stirring on occasion.
  4. Add the broth, cover and bring to a boil.
  5. Reduce the heat to a low simmer, add the spinach. Simmer for 1 hour.
  6. Taste and adjust seasoning.
  7. Transfer soup to a bowl and top with parmigiano-reggiano cheese.
