Cherry Chocolate Fudge Cookies

There are some flavor combinations, that some people, such as Loraine and I, never get tired of. Chocolate and cherry are one of those flavor combinations.

These decadent cookies use a combination of white and dark chocolate, bitter and semisweet combined with chunks of glazed cherries and the flavors of vanilla and coffee.

They truly melt in your mouth.

Note: It's is especially important that you take care not to over bake the cookies!

Ingredients

Directions

  1. Heat your oven to 350° F.
  2. Using a sifter blend the dry ingredients; flour, baking powder, salt and coffee granules together into a bowl and set aside.
  3. Using a double boiler, melt the 16 ounces of bittersweet chocolate with the butter, blend together until it is smooth and set aside to cool to room temperature.
  4. Using a stand mixer best the eggs and sugar together until they become a pale yellow and thicken.
  5. With the stand mixer running on low speed blend the melted chocolate/butter mixture and the vanilla to the egg/sugar mixture just until it is blended.
  6. Remove the bowl from the stand mixer and fold in the sifted flour, baking powder, salt and coffee granules.
  7. Gently mix in the dark and white chocolate chips and the glazed cherries.
  8. Line two baking pans with parchment paper.
  9. Using a #20 scoop (1/4 cup) place batter onto the parchment paper. Press down on the batter with your hand or a spoon and form into 3" cookies.
  10. Place the racks in the oven and bake for 10 minutes. The cookies are done when the tops are shiny and have some cracks.
  11. Place the baking pans on wire racks to cool. Once the cookies have firmed up remove them from the baking pans and place them individually on cooling racks.
  12. We find that these cookies are best the second day, although we have been known to have a couple after they have cooled just too ensure the overall quality!
  13. Store in an airtight container or re-sealable plastic bag.
