Maple Salmon

This recipe has been our go-to recipe for salmon for quite some time. However, it works best when the salmon is at least 3/4" thick and preferably about one inch thick in the center. The picture is a piece of wild BC salmon that was a half inch thick at best and the salmon ended up being over done.

It is getting harder and harder to find wild salmon with our thickness criteria for this recipe and we won't buy farmed salmon.

  1. Mix the maple syrup, soy sauce, garlic and pepper together in a small bowl.
  2. Place a small amount of the maple syrup marinade in the bottom of a shallow baking dish. Place the salmon on top of the marinade and pour the balance of the marinade over the salmon. Cover the dish and refrigerate for 30 minutes, flip the salmon after 15 minutes.
  3. Preheat the oven to 400° F
  4. Place the baking dish on the middle rack and bake the salmon uncovered for 20 minutes for a 1" thick piece. If your salmon is thinner reduce the cooking time. The salmon should easily flake with a fork.
